Perfect Gluten-Free Chocolate Chip Cookie

Making cookies is easy enough I am sure you have made them dozens of times before but when you have an allergy to certain products it becomes a challenge to find a receipe that works for you. Many people have food allergies today and more and more are finding that they have celiac disease or an extreme allergic reaction to gluten found in milled flour. I made them using ground almond flour, use a good quality like Red Mill, adding a ½ tsp. xanthan gum to the flour, it acts as a thickening agent and or stabilizer to prevent separation of ingredients.
