7 Secrets To Perfect Gluten-Free Chocolate Chip Cookies

Gluten Free Chocolate Chip Cookies

My adaption of gluten free chocolate chip cookies that are made with amond flour for those, like me, who are allergic to gluten, or just don’t like the taste of gluten-free flours. These are delicious, chewy and choke full of chocolate chips. Yum!

Ingredients

2 1/4 cups Almond Flour (no blends)
1/2 tsp. Xanthan gum
1 tsp. Baking Soda
1 tsp. Salt
2 ounces Cream Cheese, room temperature
3/4 Butter, melted and slightly cooled
3/4 cup Coconut Palm Sugar (Pure Organics) packed
1 /1/2 tsp. Vanilla Extract
2 Egg Yolks
2 cups Semi-Sweet Chocolate Chips
1 cup Walnuts or Pecans; chopped (optional)

Instructions

Heat oven to 375 degrees.

In one bowl combine the Almond Flour, xanthan gum, baking soda and salt; set aside
In a second bowl mix the cream cheese until soft with your electric mixer, add the melted butter and mix well.
Add the palm sugar and mix on medium speed for about two minutes.
Then add vanilla and egg yolks mixing well on low speed.
Add the flour slowly a quarter at a time and mix until well combined.
Add your chocolate chip morsels and chopped nuts or pecans and mix well.
Cover the bowl with plastic wrap and put in the fridge for 4 hours or more…can be left for days.
Let mixture sit on counter for about 10 minutes to warm up…drop by rounded teaspoonfuls onto parchment paper.
Bake 375 degrees for 7-12 minutes.

Notes
Parchment paper is best to use to line your cookies sheet, as it is coated with silicone, which possesses excellent release characteristics, and it is heat resistant, unlike wax paper which melts. So instead of using butter to grease your cookie sheet or oil sprays, from now on use parchment paper, besides there is no clean up, just throw it away and your pan is clean.
Bake them at 375 degrees or 7–12 minutes, depending on hot how your over is. But remember to start watching them around the 6 minute mark. As soon as the edges are getting brown and crispy looking, it’s time to take them out of the oven. If the centers are already hard then you have over cooked them. Try it, they will turn out perfectly.
